Christian Puglisi Of Relae To Open Organic Farm In Copenhagen

Christian Puglisi, co-owner of Copenhagen's Relae, is to open a farm-culinary school-think tank hybrid called 'Farm of Ideas'.

Relae, which was recently named the 40th best restaurant by 'The World's 50 Best Restaurants', is the only Michelin-starred certified organic restaurant and has also won the Sustainable Restaurant Award two years running.

Puglisi's new 27-acre organic farm is located approximately 40 minutes away from Copenhagen and is to be a "melting pot for innovation, gastronomy, and organic agriculture," among chefs, producers and local farmers. Produce from the farm, such as raw milk, has already been used to make mozzarella at his Baest restaurant, according to Eater.com.

There will also be space for visiting chefs to share ideas and discuss new techniques, for holding events, accommodation for at least 30 people and potentially a cafe and bakery. Puglisi is not the only award winning chef to get into farming lately, with Rene Redzepi's latest venture '108' having its own urban farm.

Speaking to Modernfarmer.com, Puglisi said: "We want to be international—both in the sense of people traveling to this small part of Denmark, but also of flying in a cheese wizard from somewhere and maybe doing a two-day course for local people."

The chef is looking for funding of around €4 to €6.5 million from Realdania, a private association that supports philanthropic projects, to begin renovating the farms buildings.
