Galway's Food On The Edge 2016 Reveals List Of Speakers

Galway's Food On The Edge, a two-day symposium about the future of food, has launched its schedule of speakers, topics and running order for the programme.

The event, which takes place on 24 October, will discuss topics such as 'The Future of Irish Food' and will have talks from over 50 speakers. Massimo Bottura, whose restaurant Osteria Francescana was recently crowned number one in 'The World's 50 Best Restaurants: will give a speech called 'Cooking: A Call To Action'.

Christian Puglisi, co-owner of Copenhagen's Relae and who is to open a farm-culinary school-think tank hybrid, will give a speech titled 'Farm of Ideas, Integrating Cooking and Farming', while there will also be a talk on 'Food & Beer - Exploring the Possibilities' by New York's Daniel Burns.

Discussing the event, JP McMahon, chef-patron of Michelin-star Aniar and director of Food On The Edge said: "Food On The Edge connects food communities around the world, bringing together people who care about food and the way we produce it. My hope is that the event will inspire people who have a love of food to go out and do something that makes food better. Change something, improve something. It could be something small like changing the food we feed our ourselves, the food we order [or] cook in restaurants, or perhaps improve the level of support we give sustainable, local food producers."
