Mark Moriarty To Host Pop-Ups At Hong Kong's Test Kitchen
Mark Moriarty, winner of San Pellegrino Young Chef 2015, will be the next guest chef for a three-night pop-up at Hong Kong's Test Kitchen from August 11 to 13.
Test Kitchen's goal is to provide a platform for chefs around the world to share their experiences and showcase their talents. Moriarty's pop-up will celebrate the best of Irish produce over seven courses and will include his signature dish of celeriac marinated in fermented barley and toasted hay before being baked in a salt crust, served with an emulsion of hazelnut and a sauce of raw celery juice. He will also be serving a Royale of foie gras, with sour apple, sweetened walnuts and smoked eel, as well as pigeon with turnip cooked in ponzu and cabbage.
Discussing Moriarty's pop-up, Vincent Mui, founder of Test Kitchen, said: "Mark is one of the most exciting young chefs around and we’re honored to have him cooking in Hong Kong. Mickael Viljanen and Graham Neville will collaborate with me on a menu that showcases the best of modern Irish cuisine."
