Noma to Expand With 108, a New Copenhagen Restaurant, in 2016
Noma has been one of the most influential restaurants of the past decade, but it has been just that: a single, exclusive, hard-to-book fine dining restaurant in Copenhagen.
But on Monday, the restaurant group made an announcement on their website, sharing details of their upcoming second location.
Next spring, in collaboration with the chef Kristian Baumann, Noma will open 108 (the name is pulled from the street address on Strandgade in Christianshavn).
In a press release, Baumann explained that he's been working on the menu for the last six months, nurturing relationships with new farmers, and preserving spring and summer harvests to use next year.
While Redzepi's team sets up for their ambitious popup in Sydney, Baumann will be holding down the fort in Copenhagen, serving the first tastes of his brand new dishes a la carte a few nights a week.
Unlike the lengthy, tasting menu-focused Noma, 108 has been conceived as "a place for families to come together for a quick dinner on a Monday night."
