Chef Matthew Galvin Opens Ireland's First "Dark Kitchen"

Chef Matthew Galvin has opened Ireland's first "dark kitchen".

"Dark kitchen" is a term that refers to a food preparation business that has no physical restaurant and instead operates in a rented food preparation space for the purpose of serving food delivery apps such as Deliveroo and Uber Eats.

Matthen Galvin's Ocras and Tart business, which is also known as Oat.ie, operates in an industrial unit in Churchtown in Dublin and offers three menus.

"The Easiest Way Into The Food Market"

The Business Post quotes Galvin as saying, "My ideal situation would be walking around with a glass of wine talking to all the guests in my restaurant for the evening, but nobody is going to pay for that, so I had to look at the easiest way into the food market."
