The chain Hillbilly's Family Restaurants will create 80 fulltime and part-time jobs in the first six months of 2014 as it opens a store in each of Ireland's primary cities — Galway, Cork and Dublin.  Founded in 1997 in Cork by Michael Grace, the fast food restaurant currently runs eight outlets Ireland, and will this week open an 80+ seating restaurant on Eyre Square in Galway, which will employ 40 people. Its first franchised restaurant was opened in Letterkenny, Co. Donegal in April 2011.   Manager of the Galway restaurant, Eamon Keogh, said the response to the new outlet has been “enthusiastic”.   The restaurant chain operates a franchising model, based on an initial 10-year agreement, with the possibility of extending for another ten years 10 years.
