Michelin's 2017 Nordic Guide Released; Noma Off The List While Iceland And Faroe Islands Gain Stars

The Michelin Guide to the Nordic countries 2017 has been released, which has seen Iceland gaining its first Michelin star, while Denmark and Sweden both gained a new two-star restaurant.

Dill restaurant, located in Reykjavík, Iceland, serves five-course and seven-course tasting menu comprising of dishes such as barley with malt and guillemot; buttermilk, berries and dulse; as well as pear, almond and birch, while KOKS became the first Michelin-starred restaurant on the Faroe Islands.

Maaemo and Geranium in Oslo and Copenhagen respectively, retained their three star rankings while Magnus Nilsson's Fäviken in Sweden retained its two-star status, reports finedininglovers.com.

Rene Redzepi's two-star noma fell off the list due to it being closed, however 108 restaurant, which was founded by noma and Kristian Baumann, won its first Michelin star. Its menu consists of dishes such as cured squid with bacon broth and plums (€15); grilled chicken with raw mushrooms and dried scallops (€24); as well as kombu ice cream with toasted barley and blackcurrant wood oil (€12).
