Conrad Dublin Welcomes New Director Of Operations

Conrad Dublin has announced the appointment of Gregory Brossard as its new director of operations.

In his new role, Brossard will encompass operational oversight, guest experience, staff management, financial management and reputation management.

French Native

Brossard is originally from France and grew up in a small countryside town in the Cognac region.

He started his career as senior waiter at the Michelin Star Le Cinq restaurant, located in the Four Seasons, France, where he said he instantly fell in love with the world of hospitality.

Saudi Arabia And Japan

Brossard lived and worked in Saudi Arabia for two years, before moving to Japan to work across hotels in Kyoto and Niseko.

It was in 2021 that Gregory began his career with Hilton, as resort manager at Conrad Bora Bora, before moving to Conrad’s Dublin location where he will now assume his new role.

'Passion For Hospitality'

"My goal is to collaborate with the remarkable team here at Conrad Dublin to consistently exceed our guests' expectations," said Brossard.

"By combining my worldwide experience and passion for hospitality, I am excited to contribute to the hotel's ongoing success."

The Coburg Reopens

Conrad Dublin has also announced that it has reopened its destination restaurant The Coburg.

The hotel said the hotel offers a menu of 'classic and innovative dishes' using  Irish produce, as well as a monthly supper club for guests to dine solo or in groups.

Equestrian Theme

The Coburg draws inspiration from the 19th century horse shows held in the Iveagh Gardens.

The equestrian theme extends from its horsebit chairs and leather accents to the Hermes scarves that adorn the walls.
