The Westbury Launches Limited Edition 'Art of Millinery' Afternoon Tea

The Westbury Hotel is partnering with the Council of Irish Fashion Designers (CIFD) and several milliners from around Ireland to create "The Art of Millinery" afternoon tea service.

Executive pastry chef Ray Encarnacion spearheaded the service's creation, coming up with with a collection of desserts and other sweet delicacies inspired by an assortment of bespoke headpieces designed for The Westbury by Irish milliners Aoife Kirwan, Davina Lynch, Leonora Ferguson, Margaret O’Connor and Wendy Louise Knight. 

The culinary creations on offer will include blueberry cheesecake, coconut clotted cream dressed with lime and Bacardi gel and pineapple, caramel whipped ganache with poached apples, baked chocolate tarts made from single origin Madifloro organic chocolate, and chocolate coated profiteroles filled with pear crème patisserie.

"The Art of Millinery" afternoon tea service will cost €47 per person as standard, €59 per person with Perrier Jouet or Perrier Jouet Rosé, and €80 with Dom Pérignon champagne. The service will be available from August 31 to October 1 at The Gallery in The Westbury. Advance bookings can be made by phoning the hotel on 01 646 3311.
