Chef Tom Walsh Hired By Redeveloped Portmarnock Hotel

Tom Walsh has been appointed to lead the kitchen at the redeveloped Portmarnock Hotel and Golf Links.

The hotel is currently completing a major redevelopment and refurbishment programme, which includes two new offerings to both its Seaview and Osborne restaurants. The hotel said that all work is scheduled to be completed by early August. Walsh's first new offering will be the Seaview which is scheduled to open in early June.

Tipperary native Walsh has spent a large part of his career to date working as a chef in a series of successful restaurants on the Northside of Dublin.

Originally trained in Dromoland Castle, he moved to Dublin to work in the boutique Hibernian Hotel before taking up a position with the then recently refurbished Clontarf Castle.

He's enjoyed stints at Aqua, Luttrellstown Caste, Roganstown, Cruzzos, before setting up the Award winning Samphire@theWaterside in Donabate.

"The location of the hotel in such a wonderful setting has been well documented," said Walsh. "My brief is to create a food offering that matches the setting, bearing in mind our diverse clientele which includes both Irish and overseas visitors, golfers and perhaps most important of all our local community who are great supporters of the hotel."
