Chefs Join Forces To Raise Funds For Recovery Haven Kerry Cancer Support House

Rose Hotel executive chef Odran Lucey, Marker Hotel executive chef Gareth Mullins, Merrion Hotel executive chef Ed Cooney and Merrion Hotel executive pastry chef Paul Kelly will come together on April 5 to cook a five-course meal at The Rose Hotel of Tralee, Co. Kerry, to raise funds for Recovery Haven Kerry Cancer Support House.

The evening will kick-off with snacks created by students from IT Tralee with all ingredients sourced from Taste Kerry producers and welcome drinks, followed by a special menu prepared by the four chefs. Cooney will begin with a crispy fried hen egg with asparagus and Caesar dressing while the fish course will be in the hands of Lucey and the team at The Rose Hotel, who will be serving a spa crab meat tian with apple, ginger and seared tuna loin. Main courses will include a choice of slip sole meunière by Cooney or fillet of Irish beef with roast onion puree and beef rib and foie gras bons bons by Mullins, and dessert course by Kelly will be a surprise "Tralee Rose" followed by an Irish cheese course. Each course on the evening will be accompanied by a selection of wines sponsored by The French Market.

Recovery Haven manager Siobhan MacSweeney commented, "We are absolutely thrilled to join forces with The Rose Hotel and the other amazing chefs involved in this event, as it promises to be a truly memorable night. In 2018, over 3,500 people came to us for help at our three cancer support centres across the county – an increase of 30% on the previous year and a record for the charity, so we are absolutely delighted that The Rose Hotel have chosen to help us fundraise in this way."

The evening will be hosted by Elaine Kinsella of Radio Kerry and music will be provided by Celebration. There will also be a range of spot prizes including a weekend in the Fairmount St. Andrews in Scotland with a round of golf, as well as overnight stays at The Merrion Hotel and The Marker Hotel.
