Galway, Derek has over 30 years of experience in the hospitality industry. A graduate of GMIT, Derek held the role of director of restaurants at the five-star Montreux Palace Hotel in Switzerland before going on to senior F&B roles in Bermuda, opening deputy GM in Monart Spa, general manager of Waterford Castle and, most recently, general manager at the Ferrycarrig Hotel, Wexford, since 2014.

Irish Hospitality Institute Appoints Daragh O’Neill As President
The aforementioned follows last week’s news that the Irish Hospitality Institute (IHI) has announced the appointment of Daragh O’Neill FIHI as the 30th president of the organisation.
