Canteen practices low intervention beekeeping, not over harvesting or forcing the hive to produce too much honey throughout the summer.

Canteen will have a limited amount of its city honey for sale in store.

Owner and chef Paul Williams stated, "We are about to undertake our end of summer honey harvest from our rooftop hive. We have one hive of native Irish black bees on the roof of the kitchen, primarily as pollinators in the city and we sustainably take a small amount of honey each year. We ensure that the bees have ample honey for the winter months."
