Pearse Lyons To Open Boutique Distillery On James's Street

Circuit Court President Mr. Justice Raymond Groarke has granted a declaratory order to The Pearse Lyons Distillery to serve drinks at the former St. James's Church on Dublin's James's Street.

Thejournal.ie reports that the Circuit Licensing Court direction means that when completed in full compliance with planning permission, the whiskey distillery will be entitled to a full drinks license. Counsel for the distillery Barrister Dorothy Collins informed Groarke that a €10 million refurbishment would be finished by September, when the new facility opens to the public.

The proposed boutique distillery is also set to encompass a visitors centre on one side of the church and a walkway through the graveyard into the distillery. Once it opens, it will produce 1,000 litters of whiskey per week and is expected to attract up to 75,000 visitors annually.
