Dublin's Chapter One By Mickael Viljanen Restaurant Gains Two Michelin Stars

Dublin's Chapter One by Mickael Viljanen restaurant has gained two stars in the 2022 Michelin Guide to Great Britain & Ireland.

Ross Lewis's Departure And Mickael Viljanen's Arrival

Last year saw Ross Lewis stepping aside from the Chapter One kitchen after close to three decades in the business, retaining a Michelin star for 15 years and winning the Michelin Guide Great Britain and Ireland 2021 Chef Mentor Award.

The Michelin Guide said about Ross winning the Chef Mentor Award, "The impact Ross has had on Irish restaurants over the years is clear to see, and very much an ongoing phenomenon."

Finnish chef Mickael Viljanen, who held two Michelin stars since 2019 in The Greenhouse, took over from Ross Lewis in the kitchen of Chapter One last year, and the restaurant is now co-owned by Viljanen and became Chapter One by Mickael Viljanen.

Statement By Viljanen

Viljanen stated, "After the various pandemic-related closures, we only finally reopened properly on July 27th this year. It has been an intense time of change and development for all of us involved and I couldn't be prouder of the team and how they have pulled together to bring this very special place into its exciting next chapter. Less than seven months in and two stars - that's a great return, and I’m really delighted for everyone who has worked so hard to make this happen. We are very humbled and grateful."

Statement By Lewis

Lewis stated, "My very best congratulations to Mickael, Danny and all the team at Chapter One by Mickael Viljanen, and my appreciation and respect for the incredibly valuable contribution from all the staff, front and back of house. I am so proud of this exceptional accolade for the continuing story of Chapter One."
