Top Chef Graham Neville Takes Over Reins At Dax In Dublin

Former Restaurant FortyOne at Residence head chef Graham Neville has been hired to lead the kitchen at Dax restaurant on Upper Pembroke Street in the capital.

Peter Byrne, who was formerly chef de cuisine at the Marriott Powerscourt Hotel, has taken over the head chef role vacated by Neville.

Neville, the current Commissioner General of Euro-Toques Ireland, joined Residence in 2008 and helped turn Restaurant FortyOne into one of the top fine dining establishments in Dublin.

The Irish Times reports that Neville has said his menu at Dax will be 'similar to what he has been doing during his nine-year tenure at Restaurant FortyOne, where he finished up three weeks ago', where he will join forces once again with Olivier Meisonnave, the owner of Dax, who worked with him at Thornton’s previously.

"I am excited to be working with Graham again and have always admired his cooking, particularly at Restaurant FortyOne," said Meisonnave.
