Amber Springs Steakhouse Awarded Double AA Rosette

FARM Steakhouse in the Amber Springs Hotel of Gorey, Co. Wexford, has been awarded its second AA Rosette. Owned by Tommy and Paddy Redmond, the restaurant was opened in 2016 as the newest addition to the hotel's dining portfolio.

The 2 star AA Rosette is awarded to restaurants that aim for and achieve higher standards and better consistency. Commenting on the achievement, Amber Springs general manager Eibhear Coyle said, "We believe it reflects the ethos of the hotels food foundations are local food, low carbon footprint and sustainability. We are fortunate that our Redmond Farm was awarded a Bord Bia Origin Green Award for provenance and consistency in efficiencies in farming, while focusing on improving the sustainability across all elements from farm to hotel. We believed we needed a strong steakhouse to reflect our excellent product and we had an intimate under-utilised space of an adult only residents bar - the leap to an adult only steakhouse wasn't a difficult transition.

"The key to success is to maintain consistency in our dishes, reflective of the farm produce and giving the diner a great night out. Having consulted with the AA inspector, we agreed sometime ago the key is to simplify and intensify, which we have focussed on. We want to get back to the days of relaxing and enjoying a conversation while indulging in great food and wine. This is why this award is so special; it shows we are achieving that".
